Kerala’s tropical forest gardens produce mace with a high fat and aromatic oil profile. The "Flower Mace" from this region is prized by European fragrance houses and gourmet food manufacturers for its delicate, non-bitter warmth.
While both come from the same fruit, Mace is the outer covering and offers a more refined, floral, and pungent flavor than the nutmeg seed. It is preferred for "clear" sauces like Bechamel, savory pastries, and high-end charcuterie.
